Gluten Free Food - TheEnigma - 05-21-2015 12:10 PM

Anyone here eat/bake/cook gluten free? Or want to know how to do it right?
I'd be interesting in swapping ideas or helping anyone. Always look for new recipes, and my skills at reading food labels for possibly-- and certainly gluten-containing ingredients when needed is unmatched.
Gluten free food can taste like sand, or taste really good, but you got to do it right, or it WILL be really gross.
I have a gluten allergy (I do not digest a protein in wheat, barley, rye, some oats, etc. properly and it slowly eats away at my innards). That same protein also makes making food for normal people easier.
However, I've eaten gluten enough times to realize that while my home-baked-gluten-free stuff isn't nearly as good as gluten equivalents I've made (I cheat occasionally). So, I'm always looking to better myself.
Any comments/questions one way or another is fine with me. I've been eating this way for quite a while, and I will always miss my whole wheat sandwiches.

My dad is allergic to gluten so this may be useful to him. For me I was on a gluten free diet a couple years ago, I got gluten free stuff from the local super market in the gluten free section though so I don't know much about-wait oh I forgot! I own a gluten free bible(cookbook) would you be interested in some recipes from there if I can find it?

Sure!
How's your Dad dealing with it? Most people who have eaten gluten before hate moving into eating gluten-free food, including myself.
Pre-made gluten-free food is so expensive, and for a family of five with one working parent, as we all have one form of gluten intolerance or celiac's, that just doesn't work out.

If I had gluten allergy, my current diet would have killed me a thousand times over.

I only opt for gluten free snacks if Im trying to keep my caloric intake down.

My dad has been on the diet sinve he was a teen I believe. So I guess time allowed him to get use to it? I'm sure, I should ask him some time.

You're not the only one, Brainiac. I have gluten at virtually every meal I have.

I have a nut allergy, and that really sucks. I went in for an allergy test in early 2012 to see if my allergy to walnuts and pecans were gone. So I went in and found out I have a peanut allergy. I had a skin reaction, but I was told to avoid peanuts at all costs. I had peanut butter that morning.

AFAIK I'm not allergic to any food item.

I've never been stung so I don't know about that, but if i was to base it on the amount of stuff I'm not allergic to, the odds are probably extremely low.

Ouch. If push came to shove, I would take a non-extreme nut allergy over gluten, even though I love eating about three serving sizes of walnuts, peanuts, or almonds just about every day.
However, I don't want any of that craziness where you inhale like three molecules of peanut dust or whatever and you're at risk of dying.

Here's a recipe I've dug up that I really like:

Soft Chocolate Chip Gluten Free Cookies

15 Tbsp. Sorghum flour
3 Tbsp. Potato starch
2 Tbsp. Tapioca starch
3/4 tsp. Salt
1/4 tsp. Baking soda
1/2 tsp. Xanthan gum
7 Tbsp. Unsalted butter/margarine*
1/4 C Granulated sugar
1/4 C Packed brown sugar
1 Large egg
1 tsp. Pure vanilla extract
3 Tbsp. Sour cream/plain yogurt*
1 and 1/4 C Semisweet chocolate chips

Preheat oven to 350 degrees (F). Grease cookie sheets.
Wisk together first six ingredients in a bowl; set aside.
Beat butter* and sugars with a mixer on medium speed until pale and fluffy, about 3-5 minutes. Beat in egg and vanilla. Reduce speed to low. Add flour mixture in two batches, alternating with the sour cream*; beat until just combined. Stir in chocolate chips. Cover and freeze for ten minutes.
Drop cookies onto greased sheet, keeping in mind spacing. 2 inches is recommended for tablespoon sized dough portions. Bake until centres are set and cookies are pale golden brown; about 12-14 minutes.

I used to be on a gluten free diet. It wasn't bad at all, except I did make an exception for sourdough bread. It's a lot easier these days since more companies are conscious. The key is just avoid anything made with wheat, rye, etc. Some foods are hard to find still, but honestly it's not drastic.
